Today, the winery is a model of conscious viticulture, conducted entirely according to the principles of certified biodynamic agriculture, with the aim of preserving the vitality of the soil and the natural balance of the vineyard.
Manincor's vineyards extend between 250 and 500 meters above sea level, on complex soils of dolomitic, porphyritic, and calcareous origin. Each parcel is worked manually and vinified separately to maximize the differences in exposure, altitude, and soil composition. Biodiversity is an integral part of the project: hedges, meadows, animals, and wild crops coexist among the rows of vines, creating a living and resilient ecosystem.
In the cellar, the philosophy is one of minimal intervention. Fermentation occurs spontaneously with indigenous yeasts, without forcing, and aging is long and respectful, mainly in large wooden, concrete, and steel barrels, depending on the type of wine. Wood is never invasive, but a tool to accompany the natural evolution of the wine, preserving its freshness, precision, and aging potential.
