Manincor's vineyards extend between 250 and 500 meters above sea level, on complex soils of dolomitic, porphyritic, and calcareous origin. Biodiversity is an integral part of the project: hedges, meadows, animals, and wild crops coexist among the rows of vines, creating a living and resilient ecosystem.
In the cellar, the philosophy is one of minimal intervention. Fermentation occurs spontaneously with indigenous yeasts, without forcing, and aging is long and respectful, mainly in large wooden, concrete, and steel barrels, depending on the type of wine. Wood is never invasive, but a tool to accompany the natural evolution of the wine, preserving its freshness, precision, and aging potential.
